How to set up iscsi for a computer club?

Good day!
There is a task to get rid of disks together in a computer club (booting Windows over the network and a disk with games in the same way). Having smoked materials on the Internet, I realized that this is possible thanks to iscsi technology. In general, it turned out to boot over the network, and it turned out to connect the disk with games too. There are a lot of typical settings and guides on the Internet. Used both iet and scst.
The question is: how to make a client using a PC have the ability to both read and write to disks, and after a reboot, the disks return to the state before the client manipulated, and at the same time I could make changes to the bootable system at an arbitrary time convenient for me .
I have heard that servers configured for such a load love to eat RAM (I think this can give a hint to knowledgeable people).
I apologize if the question is a noob one, but tips from the outside will be very helpful. Thanks in advance.

@fzfx

disks presented by iscsi to client machines should be stored on the server as files. for storage, use a fs that supports snapshots (zfs, btrfs). catch in some way (logoff scripts, for example) the moment of rebooting the client machine and roll back the snapshot to the previous state.
