How to set up a "star" network between 3 machines in Virtual Box?

the Virtual Box settings -network- it is indicated on all 3 machines: 1 NAT adapter, 2 adapter internal network .. but then everything is pinged, what to change so that the 2nd and 3rd machine does not ping, tell me.

Why do you think so?
All virtual machines sit on the host machine, therefore they cannot be connected in series.
Secondly, it is not at all clear what you have drawn, what kind of machines, which of them is a guest, which is a host, which subnets ...
Well, a serial connection is more of a physical level, not a logical one.

If you mean that the third and second do not ping with win7,
then you just need to do as you did
on the first and leave only the internal interface on the second and third,
and then in this variant only the first machine will ping with Win7
