How to set up a plex media server?

I installed Plex media server (latest version - 0.9.817.282) on windows 7 x64, I connect to the server from lg 42la667v TV via Smart Share, everything works perfectly, but I would like to get rid of a lot of "sorting" folders
I want simplicity: I switched to movies, everything was opened movies to music opened all the music without a lot of these folders. Tell me how to do it?

Not very relevant now, but still.
In Plex, at the moment, in my opinion, this is not (the choice of which categories to give by dlna). If there is a Plex application for the TV (for Samsung there is definitely), then you can watch in it, there is no such thing, most likely (again, by analogy with Samsung).
If you watch it via DLNA, then the Serviio media server can do this, you can configure it so that categories are not displayed at all, but only the contents of movie folders (again, it works when viewed via dlna from a samsung TV).
