How can I set a separate MSS for the entire network and for a separate ip in the network? Or different MTU for ip.
Required for Mac and Win.

Для всей сети, добавить в iptables
обычно с такой проблемой можно столкнуться при PPP подключении провайдера, на linux машинах, работающих маршрутизаторами.
