How to safely use a Payoneer card, and in general any other card (Visa, Mastercard)?

I was recently in a place where they could potentially go through my bag. With me I had cash, a payoneer card, a Yandex money card, keys and all sorts of small things.
As if everything remained in place, and 97% that no one wool anything, but I cannot rule out that the cards were copied or photographed. It is clear that if my cash disappeared, then I would notice it, and it would be quite obvious who stole it, so I didn’t worry about the cash, I just checked that the cash was in place. But now I understand that the situation with cards is not the same as with cash, because I cannot know whether someone copied / photographed my cards or not.

Also, when you hand over the card to the waiter or someone else for payment, then it may well be turned over along the way by looking at the card from two sides, and receiving information sufficient for payments on the Internet and card2card transfers, and in the old days, as I remember, it was necessary to put a signature on the check, which the cashier sometimes checked with a signature sample, and next to it were all the codes needed for online payments. In some car rental bureau, I remember they took an imprint from the card, and while they were filming, they saw the cvc / cvv code in every way.
It is clear that an ordinary person cannot make a purchase in an online store or card2card without getting fired up, but I know a person who had a similar situation, he received an SMS about the operation, called the bank, blocked the card, disputed the transaction and returned it to him. But I think it depends on the circumstances .... the bank that issued the card, the professionalism of the swindler, the effectiveness of the security system, and how soon the SMS about the operation arrived ...
