How to roll back from High Sierra to Sierra and save data (settings, documents, programs)?

Hello! There is MBP 2011 on high sierra.
The video chip died, and there was a need to roll back to Sierra to restore performance.
How to roll back to the Sierra correctly, and at the same time transfer the settings , documents , and programs as correctly as possible . First of all, they are concerned about programs and settings, as documents are in the clouds.
There are no Sierra backups, there is a second hard drive inside + backup in Acronis True Image. Still have a laptop on Windows.
I would love any experience!

You should somehow revive the video chip in the sc.
Then make backups in time machine. to the outer screw.
And then you already know.
