How to remove pre-installed software from android and generally make android for yourself?

I don't really like what Google and Windows are doing now (since win8). The user cannot do what he wants with his device - he is the user, not the "administrator".
But I want to be able to delete and install whatever I want, track processes and kill them if necessary, update when I decide that I need it ...
What are the methods / ways to get rid of unnecessary software, various Google services, etc. P. things?
I would like to get away from imposing and treating the user as a monkey in the direction of the adequate behavior of the system.

Linux must be linux...
But most people prefer convenience.
Android is a breakthrough in the world of Linux, when the words "Linux" and "convenient" can finally be used together.
PS 11 years of experience with Linux.
And deleting applications is simple: get root and delete from the drive. Just like in a regular desktop Linux.
You can use software like TitaniumBackup if you are afraid to use the file system.
