How to recover Windows data from Linux?

At a nearby school, without warning, they "switched to free software", replacing windows with ubuntu and deleting all the data from the computers of all teachers along the way. People have lost documents that they have been accumulating for years, reports, certificates, etc.
Question: is there any hope of recovering something?
I have recovery experience, but only under windows. I am very familiar with Linux. What do you advise? I want to boot from a liveCD and scan the disks with acronis, r-studio and a couple more.
Maybe you can recommend something else? Maybe there is something under ubuntu than you can see?

With a high probability, much can be restored. As a rule, if they install Linux, they do not overwrite the entire disk. Unfortunately, the data where Linux is now cannot be recovered. As for the software, I can say that all methods are good - do what will give the result.

It's easier to remove the image from the disk and r-studio will analyze it, infa will be ... 99%.
