There is all the necessary equipment, several microphones, consoles, mixers and other crap. Question - what software can be used by a simple layman? And how exactly to record from three or more microphones at the same time so that the output is stereo?

There are two options:
1. Put everything into the remote control, mix it into stereo on the remote control and into the audio recorder.
+ Enough stereo cards
- You can't remix after the fact.
2. Insert microphones into a multi-channel card, make multi-channel recording and mix on a computer.
+ Complete freedom of processing.
-You need a multi-channel card and software that writes many tracks (specific programs can be googled, in principle, all DAWs can)

Don't take this as a condescending tone, but I seriously advise you to find a competent recording engineer. Good equipment is only one of the necessary parts. The finest mics, if not properly tuned and co-directional, result, for example, in phase mismatches between the signals in several tracks, making the entire mix sound like it's out of a can. Or, for example, the sound of one group of drums will strongly climb into a microphone tuned to another. Or, for example... and so on.
By the way, the room itself is also very important, especially for drums. If you record in an unequipped room, the entire signal will be drowned in reflections, and you get GIGO. So you can record on the camera with almost the same success.
Software is the tenth thing. Any DAW will do.
Of course, if there is a desire to tinker and cope, then you do not need to look for the answer on the Toaster, but somewhere on specialized sites. There are some good home recording guides online.
