Is it possible to protect against an attack that exploits the Stagefright vulnerability by deleting the access point (APN) for MMS in the smartphone settings?

No, this is a library vulnerability, mms is one of the exploit delivery vectors, other vectors are: email, video in the browser, video on /sdcard/ ....
