How to protect yourself from contact form spam?

I have several WordPress sites. I am using contact forms created with the "Contact Form 7" plugin. I used reCAPTCHA v.2 in forms.
After the next update Contact Form 7 - reCAPTCHA v.2 was replaced by reCAPTCHA v.3
Spam appeared, sent via forms.
Questions:
1. Can the appearance of spam be associated with the change from reCAPTCHA v.2 to reCAPTCHA v.3, or did it coincide with the activation of spammers and the emergence of "new technologies"?
2. Can I somehow protect myself from such spam?

a) load forms with ajax into your blocks\modals
b) create a hidden hidden field and check it for fullness

A couple of old-fashioned ways:
1) Uncheck the box to confirm that you are not a robot
2) Hidden field that cannot be filled by a person
