How to protect data?

Tell me the methods of protecting data on a windows PC.
At the moment, for example, I'm making an archive using winrar and setting a password on it, but after rummaging through the search, I found that there are workarounds, so if you "tighten up" a little, you can open it ...
How can I protect data so that no one except them couldn't get me?

To be specific, you can install a Trojan that will steal your data before you encrypt it. Even if it is the most secure encryption algorithm in the world.
And an uncle in uniform may simply ask you to say the password. Will you really refuse him and begin to interfere with the investigation?
PS Alternatively, TrueCrypt .

What is the intruder model? Who are we encrypted from? If these are "people in gray" - it is useless to do this, because thermorectal cryptanalysis reveals any passwords.
