The sender field is not protected by anything and is not checked, and if desired, anyone can send a "letter from the president", as it is rightly said, there is no protection as such from this. The only method of protection is not to trust the sender. It is impossible to use mail to send important or confidential information, it was not created for this, for this there is such a thing as electronic document management, where a digital signature is used, etc.

But you can look in the direction of SPF and DKIM, twist the spam filters ..

I want to clarify: are you talking about preventing people from receiving letters supposedly on your behalf? (another possible option is "how not to receive fake emails on your mail server")
Configure SPF, DKIM, DMARC.
Technically, these are all crutches for a protocol that is over 30 years old, but it is quite possible to live.
