How to protect against aireplay-ng -0?

I don’t want to connect equipment by wire, so I’ll connect everything via wi-fi, however, disconnecting devices from the network can cause errors in the programs (the software is not ours), which is treated by rebooting. Hence the need for a stable connection.

The network will be at 5GHz and here I will defend myself a little, but I want to protect myself 100%. Now there are new routers with WPA3 modes, etc. Maybe there are already those that do not cut off clients at the first request?

Such a Wishlist and information security are incompatible in principle. In wifi, security is only inside encrypted tunnels, and building a network is only with replaceable keys via RADIUS, unless of course the equipment supports it.
WPA can be at least 3, at least 10 - it still will not give control over the radio wave.
