How to process (filter) incoming spam emails?

Greetings
The site has an email address ([email protected]) and, of course, this address has already been included in the spam databases. Mailings like "Check your Sberbank account; Use the services of the best site promoter in all of Russia; Our services are the best; etc.", to put it mildly, are boring.
Religious reasons do not allow using POP / IMAP Google / Yandex, sorry, but there is no such possibility, period.
I tried to connect the domain to the mail.ru service for business, but when sending a message from the form, it is noticeable, even visually, that the sending slows down by 0.5-2 seconds. Therefore, this option is also excluded.
Email clients for operating systems like Thunderbird don't handle spam, just like Android clients.
In connection with the current situation, I ask for your help in finding / selecting options for protecting against spam emails with their filtering. What would be helpful?

Raise your mail server or put mail gateway in front of the mail server on which you filter.

Raise your mail server. And already on it to deploy any filtering system according to any signs. I use spamhaus, spamcop, dnsbl blacklists plus greylisting. True, the presence of greylisting significantly complicates relations with mail.ru and some other "especially smart" mailers who put such a bolt on postal standards...

As already mentioned, your own mail server and a comprehensive filtering system, including specialized software such as Spamassassin / RSPAMd. And years of training to fine-tune them. :-)
