You make the 1st partition small (512MB - 1024MB) - it will be /boot
2nd partition you make all the remaining space - it will go under LVM.
you combine it all with the help of mdadm and some shamanism in raid1 arrays you
get
md0 /boot
md1 PV LVM
Then you cut the root partition into LVM and the rest as needed.
