Why do you have a question in the title about linking 1C with GIT (versioning system), and in the subject of the question it’s completely different - about setting tasks and tracking their implementation? Decide what you are asking about!
1) There are several options for working with GIT - from the banal unloading of configurations and storing them in the repository (meaningless and merciless, it’s already better to use the standard repository), to a more meaningful and useful, but slightly through the ass method (since it’s non-standard and you need a lot of shamanism) : infostart.ru/public/310640
2) To set tasks and track their progress, there are hundreds of paid and free systems, desktop and browser, with local databases and cloud - choose for every taste. Up to the point that since you like 1C, you can use the DSS solution, which they themselves use for their development in the central Moscow office - v8.1c.ru/model

In 1C in the Configurator there is an item - "Upload configuration to files".
Repeat this operation from time to time
And commit these received files in GIT
Tasks are controlled simply by their verbal descriptions made in human language.
In GIT, you will have pieces of the program.
Thus, if you are not a pro in 1C, then uploading to GIT will not give you much from the point of view of controlling the execution of tasks.
