How to organize the management of a site with a unique design?

Good evening.
Bottom line: I thought about whether it is possible to make sites with a unique design - not block, like WordPress, etc., but with different whistles and fakes (within reason, of course) - and give them to the customer so that he can fill them in as needed.
I'm not in the subject about templates for systems like WordPress, but as far as I understand, you can't deviate much from the block concept there. Or am I wrong, and any ideas with any scripts can be pulled on WordPress and Co?
Then, can you advise where to find comprehensive information on pulling, setting up and managing + where to read about creating an online store from scratch?
All the information I find is in pieces. I want to see complete material from the moment the first tag is set, to the organization of secure online payments.

Exactly. But for IM it is better to use a system tailored for IM.

All fakes and whistles are implemented through the ACF + repeater plugin (it's a paid infection, although ..))) )
Setting ACF = 18 seconds
You get the necessary fields in the template, then if you need a slideshow gallery, then you cut TWO files from slick and wrap the displayed fields according to the instructions, it's 12 seconds .
Further, if you need pop-ups, then you connect fancybox in the same way - another 21 seconds .
Total 18+12+21=51 seconds and your site whistles and farts!!!
I hope everything is sufficiently chewed and digested, right now I'll burp on your saucer and that's it - your site has flown!
