How to organize a network for a workshop?

There is an enterprise 27 km from the head office.
Previously, this building was rented out, at the moment the company is expanding and moving new production there.
From the previous "owners" there were wires and so on.
The current picture is as follows.
Internet comes into the building via Ubiquiti Carrier POE Adapter
With output and conversion to Lan

voip gateway is needed only for regular phones + fax machine,
it is better to take a switch for 24 ports at least, phones are also in the switch, there will be ip
phones already very good
