There is an online store. It has a whole bunch of different products. Goods are taken from different suppliers at different prices, delivery times are also different.

How to mark in the admin panel for yourself which product is from where?

select any field that you do not use when working with clients and mark it there. Or create an attribute for yourself and fill it.
