There are a lot of other people's networks around, some wifi bridges and other NoName networks with a hidden SSID
I already installed access points from different companies, I installed unifi equipment too - they say they work well - there is no use.
I feel like a monkey with glasses. There is a problem, how to solve - I do not know.
Either everything works fine, then the authorities begin to growl - the network is barely pulling, or even a yellow exclamation mark appears in the tray. Moreover, the signal shows for all, and the network hangs.
Then it can return without rebooting the equipment.
Has anyone overcome similar problems or can I bury myself?

The problem of any radio communication lies in two directions: reception and transmission.
If you have one or two access points with high power, clients will hear them, but in a difficult interference environment they will not hear clients (you most likely will not plug a two-watt adapter into each laptop).
The solution, as mentioned above, is to bring the points and customers closer together. It is very likely that one less powerful point for each room will work much better than one very powerful one for the entire office. It would be super-ideal if you put a few very small access points (not forgetting about the spatial or spectral separation of channels) in each room - the signal, as you know, weakens in proportion to the square of the distance.

Посканируйте 5 ГГц диапазон, если там никого нет - проблема решится переездом в туда.
А так это решается походом к соседям с просьбой уменьшить можность передатчиков, чтобы сетки в эфире не пересекались. Всё равно на расстоянии в 20-30 метров в офисе от точки, интернета в ней не будет и при силе сигнала в 30%, и при силе сигнала в 100%.

Минимальное - настройте все точки на один фиксированный канал, ставьте точки подальше от микроволновок, а все микроволновки уберите из кабинетов в "комнату отдыха". Можно экранировать стены, но это дорого и нерентабельно. Можно понаставить своих репитеров и уже у соседей будут проблемы.
