Start - Settings - Devices - Printers and scanners - Select a printer - Manage - Printer properties. There we change everything that is needed and save.

To always print in b.w. really enough:
Start - Settings - Devices - Printers and scanners - Select a printer - Manage - Printer properties - print in grayscale
But if you want to switch from color printing to black and white. automatically when sending from Word and Excel, then no way. These documents can also contain color, so the manufacturer does not provide such a function.
