Somewhere I found that I need to override the orderby.php template , but how?
I can't find this information anywhere on the internet.

If you open this file (woocommerce\templates\loop\orderby.php), then it says "in Russian"

This template can be overridden by copying it to yourtheme/woocommerce/loop/orderby.php.

which means that this file can be overridden by simply copying it into your theme while respecting the directory hierarchy.
Well, then Klava is in your hands and do what you want.
