How to make a VPN only for certain sites (IP)?

Hello, I made my VPN(L2TP/IPsec) according to this tutorial .
Now I want to make sure that only certain sites (IP) work through the VPN, and the rest of the sites (IP) work directly.
Could you suggest how this can be done?

Specify routes to certain networks via vpn. And remove the default route through vpn
