The extent of the installation is unclear. You can use a carbon dioxide fire extinguisher or a CO2 cylinder from a welding machine (they come in different sizes), if necessary, you can use a gas reducer. Why exactly CO2? You can use air - then any compressor is applicable, from a refrigerator, a car, an industrial one, etc., some even have a pressure adjustment, though the maximum one.

CO2 implies hellish pressure and therefore there is a high probability of getting injuries of varying severity if something bursts or vomits, do you really need it?

Adjustable valves exist in industrial design, but their price is quite substantial.
I had several projects, only instead of air there was air.
In one case, a water ball valve with an electric motor (from a leakage protection system) + a pressure sensor was sufficient.
Of the minuses - slow, designed for liquids and not designed for frequent changes in position. It is also impossible to relieve pressure in case there is no flow.
In the second, I had to screw the stepper motor to the pressure regulator from the compressor, because. it can dump excess even in the absence of a flow, and high speed was needed and accurately, but because he is also not very designed for frequent changes, he died after a couple of months, besides, he had to buy a gearbox for the stepper.
Well, the best option was 10 solenoid valves, after each a needle valve was placed to fine-tune the discreteness of each step, and accordingly, by supplying power to 5 valves, we get half, 10 full, +1 still needs to be used if you need to relieve pressure when there is no flow.
