Hello, the question is in the title. Is this even possible in Google Sheets?

No impossible. but you can write a script that, at the click of a button, will merge all the data from two sheets onto the third one and use it to make a pivot table on the fourth sheet.

You can do this without a script, and using the QUERY formula and then, based on a single table, make a summary
