In Unifi Network, there is User Groups in the settings, you can set different user groups there.
Further simply you cling the client to any of the adjusted groups.

I really didn’t use this thing, we manage with magic on the Linux gate (we have the same scheme as in your question). We use HTB + iptables on the gate to divide users into groups and assign different priorities to their traffic.
