How to learn to make real projects for real people?

The question is perhaps the dumbest and I live in my own fictional world, but still)
So, the task is to create real projects that can generate income. You can create projects for yourself and assholes like me that will make life easier, streamline workflow, increase efficiency, etc. At best, some of these projects will take off and bring even a small, but income. And you can initially create projects for real people (I specifically put it in such a way that it was clear, that is, not geeks), who will be ready to use the developed services and pay for it in the future. Those. meet the needs of the market.
Accordingly, the question is - how to learn to "feel" the market? Find out what people really need, what they lack? Please give me some good advice
PS Didn't mean to offend anyone

You need to go to work for those people who are already doing it. Work with them side by side for 2-3 years.

As far as I know, all this is done by acquaintance and "for my own", the decision on cooperation is made over a glass of tea. How to find people willing to pay good money for projects? Communicate with acquaintances, with acquaintances of acquaintances, attend appropriate parties ... But as a rule, large orders find you on their own (along the same paths), you just need to be able to keep them and do it, and this is even more difficult than finding it.
