How to install fresh PHP8?

Greetings.
Recently php8 came out, I want to put ubuntu 20.04 on prod. The
solution about which they write is to install from ondrej / php reps
I don’t fully understand who this ondrej is and can I even trust this repository?
Will dependencies break over time or not?
