My advice: take the "official" image. If this is Ubuntu, then from ubuntu.com, for example 20.04 x64. If these are ubuntu-based builds (I advise you to start with xbuntu for Windows), then on github or from their website. In general, Google to the rescue. Fill it on a USB flash drive, at least with the same Rufus. Boot from the flash drive by selecting something like ubuntu without install. See what the system looks like, poke it. If applicable, click on the installation icon that will be on the desktop. After installation, remove the flash drive and boot from the hard drive. You will see the GRUB bootloader, which recorded all the operating systems found on the computer. If their list or order does not suit you - boot into ubuntu and google "editing the GRUB menu".
