How to implement the Pro version of the application?

Hello!
Surely, you have seen on Google Play when they release 2 versions of the application (with AdMob ads and without ads - Unlock).
I would like to know how the functionality of the Unlock version is implemented, which removes ads from the application. Is ads added to the snippet and then the snippet is removed or how...?

If you need exactly Unlocker, then through the PackageManager: an example on stackoverflow
If you need a separate application, then through build flavors. Another option is to use in-app purchases.
