How to implement a tunnel between Centos and Mikrotik?

Good day! Please tell me how to organize this connection, well, or refer to an effective manual. What is the essence of having iron standing in the data center. the virtual machine with Centos acting as the gateway looks outside. There are also 3 offices associated with IPsec (tic2011 tick2011 tick3011). The question is how they can be tied to a piece of iron in the data center. Thanks in advance

Mikrotik supports a whole bunch of VPN technologies (ipsec, l2tp, ovpn, ipip). Choose the one that you know better how to configure on your gateway.

I am using IPSec. On the Mikrotik side, it is already there, on the Centos side, the strongswan package is installed. Shvan has very detailed documentation, lots of examples.
Cons - encryption is done in the kernel, to understand how packets go, you need to have a complete scheme (which indicates at what point the packets are encrypted).
