How to ignore a certain category in woocommerce when selecting related products?

There is a store in which the category "All assortment" is automatically assigned to each product when saving. Accordingly, the entire range is displayed in similar products. How can this category be excluded from the list, or at least display similar products only by tags, without taking into account the category. Or perhaps there is another solution?
