The problem is in Wayland, more precisely with discord, telegram, and zoom. Most likely, they are based on the old X11, and the screen sharing is implemented through x features. In Wayland, the applications themselves work through xwayland and cannot touch other applications.
Actually, the choice is small - either update applications and make them work natively with wayland, or start the system with X11 (at the entrance, click on the gear and select "Ubuntu on X11"
