I can't... if there is only one network segment behind CheckPoint_om with one vlan for ip-phones, then after Mikrotik2 there are a lot of them!!!

I suggest looking towards the mangle. You can attach a routing mark to phone traffic, you can determine phone traffic by src-address-list, dst-address-list, dst-port, and so on. Attach the required routing-mark to such traffic and, according to these marks, perform routing on both mikrotiks.
