2. No way, maybe literally anything can go in the title.
3. The title in this case is quite true, and says that you have NT 6.1 - this is win7

Windows NT 6.1 is internal versioning in MS
NT is New Technology
NT 6.1 - Windows 7
NT 6.2 - Windows 8

dig into this project , they give out a lot of useful information about the platform (browser, operating system, type of hardware, etc.), there is a lot that is taken from the user agent
