How to enter the topic at a new job?

I worked for 3 years at the same place, we wrote the project from scratch with a small team (3 people + 1 gave mathematical calculations). I was there formally on the same line, but informally I have more experience, and I offered some solutions, did the decomposition of tasks, etc. But it was not as a leader - after all, democracy, etc.
Now there is a prospect - a new job with a transition to a higher position, but it will be necessary to perform managerial functions + continue someone's project. And then ahtung! I bet I won't be able to figure out the new project as quickly as I pictured in my mind. Hence the question: how long did you deal with existing code at a new job? How does this happen in general - do you look through the entire system or study individual blocks as necessary? How does the employer evaluate whether I am doing well or not? And how do the first two to four weeks at a new job go? How do I know if the employer is aware that I need time to understand the project? How do I estimate the time to complete new tasks that I did not encounter at my last job?
