BT data transmission from the GPS receiver is a normal COM port connection and normal data in text form. It's not entirely clear what you're trying to achieve.
You can connect a BT dongle on your computer, connect it to a GPS receiver and "collect" data from the COM port into some file. Then this file is used during emulation.
But there is one caveat. Android uses within the framework certain objects (providers) to "standardize" the handling of various hardware implementations within the framework. Therefore, you need to somehow register your provider, palming off the received data from the BT connection. And this is not at all a guarantee that other android services will not use this data for tracking. It is much easier to indicate in the settings that you do not agree to share tracking with Google, periodically delete the tracking file, and also use a proxy to filter out attempts to such transfers.
