How to embed softsub in video file in linux

You need to embed subtitles in the video, but not hardsub. Wikipedia says that this is possible, but I can’t find how to do it, everywhere embedding is understood as a hardsub.
PS required to watch videos with subs on xbox 360

If the box can read mkv, then through mmg (mkvtoolnix)
