How to capture the essence of beautiful UI design? People on simple pebbles like atmega328 do wonders, but here even on STM32 it doesn’t work out very well. What can you read in order to improve your skill in this direction? There is an experience of graphical interfaces only in PyQT, in QT Designer, but it’s still simple there ... But how can it be, somehow it’s gemorno to draw everything pixel-by-pixel ...

is a separate profession and science, there are a lot of books, articles and other things, how to make convenient buttons, how to display information so that it is clear how to arrange elements so that the monster does not come out, why and how to apply animations, typography and all other things.
Reading an article or two and starting to do cool things will not work, of course. Although the minimum things that will already improve the interface can be figured out pretty quickly.
The fact that you have to do it all for microcontrollers gives its own specifics, but not much - remember that for most of the history of building interfaces, people dealt with screens that were not much better.
