How to disassemble hardware RAID and build software?

Good afternoon!
Situation: The
built-in RAID on a Supermicro server motherboard failed and it is not clear for what reasons the collapse of the raid (mirror, raid 1) was detected. Maybe a power surge, although the server is in a data center with good UPS, maybe the raid itself could not cope with the load, maybe something else.
We decided to switch to a software raid using WIn 2012, since just for a mirror (raid 1) - a software raid will be enough and this is clearly more reliable than a semi-raid on the motherboard.
Now the question is:
How to correctly disassemble the current hardware RAID 1 (based on intel rapid storage technology) without losing data so that Win can see 2 physical disks? Which then by means of OS in a mirror we form.

@ArmataZen

1. Make a disk image (copy the necessary data) to a third medium.
2. Make a disk image (copy the necessary data) to the fourth medium.
3. Make a disk image (copy the necessary data) to the fifth medium.
4. Check the image and data for readability.
5. Disable the raid. The OS will boot from the first disk in the queue.
6. Delete partitions on the second disk and create a raid with the first one.
