Here's the real challenge for a GitHub portfolio:
Create a class (like a wiki): a cross-linker content.
1. Source text.
2. Template for replacing the found term from the text
3. List of terms (and their corresponding synonyms) and their URLs (for descriptions).
4. A set of selectors to get the desired part of the page text (from URL point 3) from all similar pages (ignoring menus, footers, etc.).
Source text with links inside the text to existing terms.
The task is simple, but it will immediately let you know the level of your knowledge of the PHP language.

You don't need a portfolio for a programmer. enough to have knowledge and experience .
if they are not there, go junior.
If they don't, write something of your own. gain knowledge and experience.
the portfolio of programmers is from the mid-00s, when programmers made websites on their knees and were both layout designers and designers)) now, with the current level of separation of duties and complexity of development, it is simply impossible to come and say "I did it myself and from scratch" . any more or less serious project on the Internet is the result of teamwork, the era of "enikeev" programmers is a thing of the past.

Make your site a business card. And then uncle Vasya from the third floor. And then mom. Then my blog. On your business card site, you saw the "portfolio" section, where you insert links and an approximate description of two business card sites, Mom and Uncle Vasya, and your blog. For 2-3 months of dust-free work, you can rivet a dozen small business card sites, and blogs for your girlfriends, who will tell everyone with pride and splashes of saliva that they have a self-written blog, and not some kind of tweeter, etc. d. Word of mouth will work and you won't even have to look for a job, it will find you.
And by the end of the time you have a portfolio and, although poor, meager, but still experience.

Well damn, why ask such things, especially here. You know what it looks like - "I want to get a job as a salesman in a spare parts store, but they only take experience there, but how can I gain experience?" By asking such questions on a toaster, people will never achieve anything, because already subconsciously they will rely on the opinions of other people and wait for them to answer. You need to ask yourself such questions and find a way out of such situations yourself, and not wait for someone wise to answer. I have a friend who does not go to work because he does not have money for travel. And in order to have money for travel, you need to work. He also has a vicious circle. In general, if such questions are asked, then in the forums for psychological assistance.

Your projects.
If freelancing, then look for small projects first. If in the office, as a junior, then you will be asked for knowledge, not projects.
