A small remark: put the region correctly when checking the demand through wordstat.
For example, residents of the southern regions are much more likely to look for air conditioners than residents of the northern regions, "expensive" services will be sold only (conditionally) in Moscow and St. Petersburg, etc.
And be sure to look at the history of requests to see the trend: it is better to launch in a growing market than in a stagnant one.

You made a correct mistake in terms. Demand and profitability are completely different concepts. Demand indicates demand, and profitability is a derivative of supply, in other words, the level of profitability. These two concepts can be completely different directions.
High demand (in the context of requests) - Not equal - High profitability (in the context of project goals)
Requests may be few, but in terms of money, the profit from the project will be higher than in a project that has a lot of requests. There are many reasons for this, from product characteristics to marketing policies. A vivid example from the financial market: MFIs buy thousands of leads, and business profitability is often negative. See how many requests for the word loan, etc. The business is in demand, but not profitable.
In a general context, it is difficult to answer your question. Need more specifics.
