How to determine for yourself the list of necessary knowledge/skills?

I will try to briefly explain the essence of the dilemma, perhaps someone has already encountered this, or it will be useful for someone to read for themselves. To begin with, I, by my (stupid or not) nature, are greedy for knowledge, but because of this, there is always suffering with the choice of one or another field of activity, because I want to know everything and everywhere .... stupid fear of missing something something important... I get interested in IT (probably because it's fashionable or/and because of money), then I dive back into something else, more familiar. I’ll explain with an example, I’m interested in consulting, and GameDev to some extent, there is also a craving for Data Science (not for monetary purposes), there is a corresponding list of knowledge for this, but is this enough? I mean, I get a feeling of anxiety and fear that I will miss something important ... some kind of Grail or something ... I understand that this feeling is stupid, I understand that a person will always learn new things almost every day all his life, but for me it becomes a very big moral problem to “calm down” and limit my knowledge needs ONLY to some specific things, some industry (for example, to the same 10 thousand hours are many known). If you have experienced or are facing something like this, how do you restrain yourself or do you need to restrain yourself at all in this case? I am very interested in things related to the process of logical thinking itself, analyzes, etc. But due to the abundance of everything interesting, I can’t put everything together into some kind of single system, I’m afraid to get lost in all this .... Already it seems that it would be easier to live without having a choice, or brains to think. I would be very grateful for all the feedback absolutely, from negative to positive!

First, go through vacancies in areas of interest and write out what is often required and unfamiliar. Secondly, come to terms with the idea that it is impossible to know everything, and start prioritizing.
