How to derive an equation from statistical data?

There are statistics on cars for several months. Dozens of scores.
How to get an equation for fuel consumption from all this data. For example [flow rate
] = [average speed]*0.5 - [number of stops]*100 - [number of brakes]...
result. But in this case it will be a linear function.
I forgot everything from higher mathematics - what to use, where to dig?
