2 - modem with IP from the provider
You need to raise the OpenVPN server, but with the following conditions:
Connect from the first interface:
192.168.88.1 - gateway
192.168.88.240 - IP pc
9001 - port for VPN
192.168.8.1 - modem gateway
192.168.8.100 - PC IP

Who will tell you what to prescribe in the config and how to raise it all?

And what is the problem? By default, OVPN listens on all interfaces, if port forwarding is configured properly, everything will work. If, on the contrary, you want it to work only through one of the interfaces, do not open the second port, that's all.
