For example, there is a product, let's call it Cheburashka. For him there is: an
age limit of 10 years,
can have from 2 to 5 ears,
in the category "hairy"
in the category "eared"
manufacturer - "Babkinskaya miracle toy".

Option 1 - use product attributes. That's what they exist for.
Option 2 - register your taxonomies and link them to products with register_taxonomy_for_object_type()
