1 server. It has VestaCP installed.
2 server. Without any panel, but all the necessary components for operation are installed manually.

How to change the domain parameter on a server with VestaCP via SSH.
The domain has already been added to the panel.
You need to configure mask support in Apache, that is, write the
ServerAlias *.domain.com

I figured it out myself with the help of console commands + vi, which I edited.

vi is, of course, true and hardcore, but mc is both faster file system navigation, and the built-in editor (mcedit) is more human (imho)
