These guys have some cool interactive maps in different (customizable) styles.
No way, Google gives ready-made rasters. The maximum that you can squeeze out is to apply some kind of graphic filter and change blue to green.
As noted above, mapbox using geodata (in vector source format) from the OpenStreetMap project allows you to create your own custom styles. And here you can already show your designer vein.
