How to collect statistics and store it?

Good day.
What are the ways to organize statistics? It is about how to collect and where and in what form to store this information?
For example: my site has statistics of visits by day. How to store this kind of data in the database?
There was an idea - to create a separate entry for each day. But how then to determine which users visited the site and at what time?

It seems to me that for typical tasks there are free Google Analytics and Yandex.metrics. What is your task so unique that you need to create a statistics service for it?

raw logs are stored and selections from them are configured, typical selection results (day, week, country, page) are also stored after processing
